- Une fois colorer ajouter les carottes en dés et mélanger.
- Verser le Calvados et flambé, remuer la cocotte jusqu'à arrêt des flammes
- Ensuite ajouter les lardons, le bouquet garni, la moitié du persil haché et mouiller à hauteur avec le cidre, porter à ébullition puis mettre sur petit feu, couvrez et laisser mijoter avec le couvercle 1h environ en surveillant.
- Pendant la cuisson, préparez les champignons en les coupant en lamelles, les poêler avec un peu de beurre afin qu'ils rendent leurs jus mais pas trop cuit salez poivrez et les réserver
- Une fois le lapin bien cuit, enlever le de la cocotte pour faire la sauce, ajouter hors du feu 3 bonnes cuillères à soupe de crème fraîche, bien mélanger, ajouter les champignons, rectifier l'assaisonnement si besoin et porter à petite ébullition pendant 5 minutes.
- Versez la sauce sur le lapin et parsemez de persil haché
